Ingredients

• Medium-sized croaker fish
• 1 pack Sympli Yam Fries
• 1 medium tomato
• 2 small fresh red chilli peppers
• 1/2 medium onion
• 2 garlic cloves, minced
• 2 tbsp vegetable oil
• 1/4 tsp curry powder
• 1/4 tsp thyme
• 1 seasoning cube
• 1/2 tsp white pepper
• 1 tbsp sweet chilli sauce
• 1 tbsp ketchup
• 1 tbsp suya spice
• ¼ tsp ground nutmeg
• Salt to taste

Wash croaker fish thoroughly with tap water. Don’t forget to remove the scales and clean out the head of the fish.Pat dry with paper towel; set aside.
Heat up oven at 180 °C
Add tomato, fresh red chilli pepper, onion and garlic in a food processor or blender. Blitz for 30 seconds on medium speed till a not-so-smooth purée is formed. Place content in a mixing bowl, and add all other ingredients. Mix thoroughly with a spoon to combine.
Place croaker fish on a chopping board and make three deep incisions on each side of the fish to allow for easy penetration of the marinade mixture. Generously coat the fish with the marinade on the both sides. Reserve a little marinade for basting.

Place fish on the middle rack of the pre-heated oven. After 20 minutes, baste the fish with the reserve marinade and a tablespoon of olive oil. Leave to grill for another 15-20 minutes.
Heat up 475mL vegetable oil in a frying pan.
In a mixing bowl, add Sympli Yam Fries and salt to taste; mix thoroughly to combine.
Using a cooking tong, gently drop yam fries piece after piece into the hot oil, being careful not to overcrowd the pan. Fry for 5-7 minutes, until crispy.
